Avial(veggie mix)

Ingredients


Green banana                 300gm
Yam                               200gm
Snake gourd                   100gm
Indian vellari                  100gm
Big onion                        2nos (200gm)
Drumstick                       3nos
Carrot                            1no
Egg plant                        1no
Potato                            1no
Green chilies                  4nos
Grated coconut               1 cup
Aniseed.                         1 tsp
Water (boiled)                2 cups
Turmeric                        1 tsp
Curry leaves
Salt

Preparation

Peel the skin and cut the vegetables up into 2 and 1/2 inch long pieces. Boil the vegetables in two cups of water with two tablespoons of coconut oil and salt. Close the lid until vegetables are cooked on low flame (25 minutes). Occasionally mix the vegetables very gently. Then grind the coconut with aniseed (jeera) powder and turmeric into a smooth paste and mix with the veggies. After one minute switch the stove off. Mix in two tablespoons of yoghurt. If the dish is quite dry, add little more water with coconut paste. Ready to serve. Can be enjoyed with porridge.
