Palpayasam



Today I am going to prepare a palpayasam for you. Payasam is the most notable desert for any Keralite festivals and celebration. There are several variations to payasam. Here I will be preparing palpayasam where milk is the prime ingredient. Payasam is ideally prepared in Otturuli (Bronze utensil) or steel uruli (Steel utensil) but here I will be using pressure cooker for the ease of cooking and save on preparation time without compromising on taste. All we need is just 3 ingredients to prepare palpayasam.

Once you attempt it you would want to try it again. Feel free to adjust the consistency and sweetness according to your taste. You will get the payasam rice from any Indian supermarket.


Ingredients

1 cup = 250ml
Unakkalari (payasam rice), ¼ cup
Milk, 3 cups
Water, 1 cup
Sugar, ½ cup
Cardamom seeds, 3 piece


Preparation

  • Wash and soak the rice for 15 minutes.
  • Add 2 cups of milk and 1 cup of water to the pressure cooker.
  • Drain the water and add rice to the pressure cooker .
  • Boil for two minutes and close the pressure cooker.
  • Cook the rice for 25 minutes over very low flame.
  • Switch off the flame and set aside until the pressure released.
  • Once the pressure is released open the pressure cooker and switch on the flame.
  • Add sugar and rest of the milk in low flame.
  • Stir occasionally to avoid sticking to the bottom or over flowing(approximate 15  to 20 minutes according to your consistency).
  • Add cardamom powder and mix well
  • Once cooled it will became more thick.
  • Switch off the flame and enjoy it cold or at room temperature.
  • It will be 700ml payasam.
