Upma

Serves 4

Ingredients

Semolina (roasted)                   : 2 cups (300gm)
Ghee                                       : 2 tbs
Onion (finely chopped)             : 1 no (75gm)
Carrot (finely chopped)            : 2 tbs
Ginger (finely chopped)            : ½ tbs
Green chilies                            : 2 nos lit lengthwise
Cashew nuts                             : 15 nos
Mustard seeds                           : 1 tsp
Urad dal                                   : 1 tbs
Curry leaves                             : as desired            
Salt                                          : as desired
Sugar                                       : 1 tsp (optional)
Water (Hot)                              : 3 cups
Preparation
Heat ghee in a saucepan and add mustard seeds and when they start crackling add urad dal, fry it for thirty seconds on low flame and add cashew nuts. Fry until light brown then add onion, stir well until the onion becomes translucent. Add chopped green chilies, ginger, curry leaves and sauté for a minute. Then add 3 cups of water to this mixture, salt and sugar. Add semolina to the boiling water, little by little and stir immediately. When the water has fully evaporated, semolina is cooked. Close the lid for 2 minutes and then transfer to a plate.
Enjoy the Upma with banana.

P.S. If the semolina is not roasted, you can roast it on low flame until it turns light brown.
