Chicken Curry

Ingredients


1.    Chicken                                     1 kg
2.    Big onions                                  4nos
3.    Ginger garlic paste                    1 tbs
4.    Tomato                                     1 no
5.    Green chilies                             3 nos
6.    Kashmiri Chilly powder                            1 1/2 tbs
7.    Pepper powder                          1/2 tbs
8.    Coriander powder                     2 1/2 tbs
9.    Turmeric powder                      1 tsp
10. Garam masala                           1 tsp
11. Fenugreek                                 1/2 tsp
12. Mustard                                    1/2 tsp
13. Coconut (chopped to 1/2 inch)  1 tbsp
14. Curry leaves
15. Salt, to taste
16. Water                                       1/12cup

Preparation


Marinate chicken with ginger garlic paste and set aside for half hour.

Heat four tablespoons of coconut oil in a saucepan. Add mustard and fenugreek. Once the mustard pops, add coconut pieces and sauté until light brown. Add shallots and sauté until it browns,then add tomato and sauté for another two minutes. After that, add ingredients 6-9 (spices) and continue to sauté until oil separates, followed by green chilly. Throw in the chicken with a little salt, curry leaves and sauté for a minute, then cover the saucepan. Keep the flame on sim for ten minutes, stirring occasionally. Pour water and Garam masala, cook it for ten more minutes until the gravy thickens. Your curry is ready.

For faster preparation, use pressure cooker (Single whistle suffices). 

Enjoy with Appam, chappati or bread.
