Bittergourd Stir Fry (Pavakka Upperi/Thoran)
Ingredients
Bitter gourd, 190 gm
(cut into small
pieces)
Sliced onion, 110 gm
Green
chilies, 2 no's
(cut into
2 pieces each)
Grated Coconut, ¾ cup
Coconut oil or
Canola oil, 2 tbs
Turmeric powder, ½ tsp
Curry leaves, a few
Salt, 3/4 to 1 tsp or to taste
Mustard seeds , 1 tsp
Preparation
Heat oil in a
sauce pan and add half tsp mustard seeds. Once it pops add onion, curry leaves, chilies, turmeric powder, and sauté for 2 minutes. Add salt and sauté for a few seconds. Add bitter gourd and sauté for two minutes. Cover the pan and cook it for four to five minutes over low flame. Open the lid and sauté for a few seconds. Cover the
pan and let it cook on low flame for another four minutes. Then add coconut and sauté for another two minutes over medium flame. Switch off the flame. Bitter gourd stir-fryg is ready to
serve.
