Ingredients
Dry ingredients
Plain flour, 1 cup
Baking soda, ¼ tsp
Baking powder, 1 tsp
Cinnamon powder, ½ tsp
Nutmeg powder, ¼ tsp
Clove powder, ¼ tsp
Salt, a pinch
Wet ingredients
Butter (softened), 100 g
Brown sugar, ¼ cup
Egg (room temperature), 2 nos.
Vanilla essence, ½ tsp
For caramelized fruits
Fine white sugar, ½ cup
Hot water, 1 cup
Cherries, 100 g
Blueberries, 50 g
Raisins, 2 tbs
Tutti frutti (green and red), 2 tbs
Chopped candied ginger, 1 tbs
Orange zest, ½ tbs
Chopped dates, 3 nos.
Chopped cashew nuts, 10 nos.
Chopped almonds, 5 nos.
Chopped walnuts, 3 nos.
Preparation
- Heat the white sugar in a pan over a low flame and allow it to melt completely.
- Once it turns brown, add hot water very slowly and carefully, because it may splash and cause burns.
- Boil it for 3 minutes and add fruits, tutti frutti, and ginger. Boil for another minute.
- Switch off the flame and let it cool completely (you can do this one hour before baking).
- Grease the cake tin with butter and line it with butter paper.
- Sieve flour with baking soda, baking powder, cinnamon powder, nutmeg powder, clove powder, and salt, thrice (or whisk together and sieve once).
- Beat butter in a wide bowl for two minutes or until pale and fluffy.
- Add brown sugar and beat for another two minutes (start slow).
- Add eggs one by one along with vanilla essence and beat until well combined.
- Add caramelized fruits and beat for 5 seconds on low speed.
- Add orange zest, dates, and nuts. Mix with a spatula.
- Preheat oven to 180 degrees Celsius.
- Add dry ingredients and fold with a spatula.
- Transfer the batter to the pre-prepared cake tin.
- Tap it thrice to release the air bubbles (do not forget!)
- Bake for 50 minutes at 160 degrees Celsius.
- Insert a toothpick into the middle of the cake. If it comes out clean, the tasty cake is ready!
- Transfer to a wire rack to cool down.
- Then transfer it to a dish and keep it covered with butter paper (for one day).
