Adzuki Beans Stir Fry (Thoran)

 


Adzuki (Azuki/Aduki) beans is a kind of red beans. It has several health benefits. 

It is high in dietary fiber, one of the key elements of digestive health. It packs a wealth of nutrients, and minerals like calcium, magnesium and zinc. It is protein rich, so it is suitable for vegans and vegetarians. It helps to improve the functioning of kidneys, making it diabetic friendly as well. 

Eat adzuki beans in small portions on a daily basis to help boost the nervous system function.

You can prepare so many dishes with adzuki beans, including salads. Today I am sharing a stir fry recipe.

Ingredients

1cup=250ml 

Adzuki beans, 1 cup
Water, 2 cups
Salt, ½ tsp
Oil, 2 tbs
Mustard seeds, ½ tsp
Onion (finely chopped), 1 no. (small) or 60 g
Garlic (finely chopped), 3 cloves
Green chili (chopped), 1 no.
Curry leaves, a few
Grated coconut, ½ cup
Turmeric powder, ½ tsp
Kashmiri chili powder, ½ tsp
Cumin powder, ¼ tsp

Preparation

  • Soak the beans for 4 to 5 hours.
  • Wash and transfer the beans to a pressure cooker along with two cups of water and salt. Cook on medium flame until the first whistle, and then lower to the flame for the next three whistles. 
  • Remove from heat. Set aside for the pressure to release.
  • Meanwhile heat oil in a frying pan and add mustard seeds.
  • Once it pops, add onion, garlic, green chili, and curry leaves and sauté until translucent.
  • Add coconut and spices, and sauté for one minute.
  • Transfer the coconut mix to the beans and mix over low flame. If there is excess water, allow it to evaporate.
  • Transfer to a dry dish and serve with rice or porridge.
