Crab masala

                                 


Ingredients

Crab, 1 kg
coconut oil,4tbs
Mustard seeds, 1tsp
shallots,185 g
Ginger (finely chopped), 15 g
Garlic (Finely chopped), 15 g
Tomato, 90 g
Kudampuli*, 1 piece
Green chili (slit), 2 nos.
Curry leaves, a few

Spices**

Turmeric powder, 1 tsp
Kashmiri chili powder, 1 tbs
Regular chili powder, 1 tbs
Coriander powder, 2 ½ tbs
Pepper powder, 1 tsp
Fenugreek powder, 1/4 tsp
Garam masala, 1 tsp
Salt, ½ tbs or to taste.
Hot water, 2 cups
Chopped coriander leaves, a handful

*Rip Kudampuli into two or three pieces using your fingers (do not chop with a knife) and soak in water.

**I use homemade spices. 

Preparation

  • Heat oil in an iron pan and add mustard seeds.
  • Once it pops, add shallot and sauté for three minutes over a medium flame.
  • Add ginger and garlic; and sauté for two minutes.
  • Add spices and sauté for a few seconds.
  • Add tomato, green chili, and curry leaves; and sauté until mashed. 
  • Add cleaned crab and toss to coat well with masala.
  • Close the pan and cook for five minutes.
  • Open the lid and add hot water, salt, and Kudampuli. Cook for another fifteen minutes.
  • Check salt.
  • Stir occasionally to evenly coat masala and avoid charring at the bottom.
  • Spread coriander leaves and remove from flame.
