Egg sandwich
October 9th is celebrated as World Egg Day. Eggs have quite a lot of health benefits. They are a very good source of inexpensive, high-quality protein. More than half of the protein of an egg is found in the egg white, which also includes vitamin B2 and a lower amount of fat than the yolk. Eggs are one of the few natural sources of vitamin D which helps with absorbing calcium, maintaining healthy bones, promoting neuromuscular function, and reducing inflammation. It is good for hair growth and skin beauty, and overall health. Today I am sharing the recipe for a healthy egg sandwich, for two people. Happy World Egg Day to everyone!
Ingredients
Organic free-range eggs, 4 whites and 2 yolks
Broccoli, 100 g

Vegetable oil, 2 tbs
Minced garlic, 1/2 tsp
Finely chopped green chili, 1 no

Sliced onion, 120 g
Chopped capsicum, 1/2 part of one
Pepper powder, 1/2 tsp
Salt, 1 tsp

Preparation
- Soak the broccoli florets in water for 30 minutes with 1/2 teaspoon of turmeric and salt.
- Remove the stem and soak for two minutes in hot water and drain the water.
- Finely chop the florets and set aside.
- Add 4 egg whites and 2 egg yolks in a bowl, whisk well and set aside.
- Heat oil in a cast iron or nonstick pan and add garlic, green chili, and onion.
- Saute for 2 minutes over medium flame.
- Add broccoli and capsicum, and sauté for another 2 minutes.
- Add salt and pepper, mix well.
- Pour egg and continue stirring gently until the egg is done.
- Transfer to a bowl.
- If you prefer not to scramble, pour the egg mix onto the vegetables and then leave closed for a minute over low flame. Open and flip over. Close the lid again and cook for another minute. When the egg is done, cut and transfer to a bowl.
- Sandwich the egg between bread slices.
- [Optional] Top with a little tomato sauce.
