Banana Walnut Cake
Here is my quick and easy recipe for a healthy banana cake. A must-try if you have ripe bananas in your pantry
Ingredients
1cup =250ml
Whole wheat flour, 1 ½ cups
Baking powder, 1 tsp
Baking soda, 1/4 tsp
Salt, a pinch
Cinnamon powder, ½ tsp
Banana, 3 nos. or 1 ½ cup (mashed)
Eggs (room temperature), 2 nos.
Organic brown sugar, ¾ cup
Olive oil,120 ml
Walnuts (finely chopped), 2 tbs
Preparation
- Grease a cake tin with oil on all sides. Dust lightly with one tablespoon of flour and tap off any excess.
- Combine flour, baking powder, baking soda, salt, and cinnamon powder, then sieve twice and set aside.
- Mash the banana with a fork and set aside.
- Beat the eggs in a wide dry bowl for two minutes or until fluffy.
- Add sugar and beat again for two minutes.
- Scrape down the sides and mix with a spatula.
- Add oil, vanilla essence, and beat for thirty seconds.
- Add mashed banana and beat for another 30 seconds.
- Add the dry ingredients to the wet ingredients and gently fold with a spatula to combine well (until the flour disappears).
- Gently fold in the chopped nuts.
- Transfer the batter to the prepared baking tin. Tap it twice to get rid of air bubbles. Sprinkle a few walnuts on top.
- Bake the cake in the preheated oven at 180 degree Celsius for 40 minutes.
- After 40 minutes, insert a toothpick to the centre. If it comes out clean, the cake is ready.
