Pumpkin Thoran (Stir-Fry)

Pumpkin has several health benefits. It is rich in Vitamins A, E, C, potassium, magnesium, and calcium, which is good for bone development in children. The iron content of pumpkin helps you to prevent anemia, while Vitamin A helps to improve your eyesight. It also improves your immune system. 

You can prepare several dishes with pumpkin, like payasam, pumpkin dal, pumpkin curry, etc. Here I am going to make a tasty and healthy pumpkin thoran (stir fry).






Ingredients

Pumpkin, 500 g
Water, ½ cup
Grated Coconut, 1 cup
Green chili, 3 nos.
Shallots (chopped), 8 nos.
Turmeric, ¼ tsp
Ginger (finely chopped), ¼ tsp
Salt, ½ tsp

For seasoning:
Coconut oil, 1 ½ tbs
Mustard seeds, ½ tsp
Urad dal, 1/2 tsp
Shallots (finely chopped), 3 nos.
Curry leaves, a few
Dry red chili (whole), 1 no.

Preparations

  • Peel and cut the pumpkin into small pieces.
                                               

  • Wash the pumpkin pieces and cook in a saucepan, over medium flame by adding a half cup of water.
  • After 10 minutes, it will soften. Add salt and mix well.
  • Meanwhile, crush the coconut along with shallots and green chili.
  • Once the water evaporates completely, lower the flame. Add crushed coconut, ginger, turmeric and mix well.
                                          

  • check salt
  • Switch off the flame.
  • Heat oil in a pan. Add mustard seeds.
  • Once it pops, add urad dal and sauté for 3 seconds.
  • Add shallots, curry leaves, and whole chili. Sauté until onion turns golden brown.
  • Add this to the thoran.
Your pumpkin thoran is ready. Enjoy with rice as a side dish.
