Ingredients
Wheat semolina, 1 cup
Brown Sugar, 3/4 cup
Desiccated coconut, 1/2 cup**
Ghee, 4 tbs
Raisins, 24 nos.
Hot water, 1 cup
Cardamom powder*, ½ tsp
Cashews (crushed), 15 nos.
*Note: If you do not have cardamom powder, grind cardamom seeds in a mortar and pestle.
**if you want to make it sweeter add 1 cup sugar.
Preparation
- Wash the wheat twice and drain the water through a strainer. Roast it in a pan to dry out completely and then transfer to a bowl.
- Grind sugar and set aside. If your sugar is already very fine, you can add skip this step.
- Add coconut to a pan and roast for three minutes over low flame (need not brown).
- Heat ghee in a pan, and sauté raisins until they swell up. Immediately transfer to a bowl.
- Add wheat to the same ghee and roast until the aroma rises (approximately 5 minutes). Stir continuously to avoid burning.
- Add hot water and cook until the water completely dissolves. Stir occasionally.
- Add coconut and sauté for a few seconds.
- Add sugar and cardamom powder. Sauté until the sugar syrup is completely absorbed and mixture is dry.
- Add cashews and remove from heat.
- Once cooled, roll the laddu of preferred size in your palm. Press in a raisin to garnish.
