Wheat Idiyappam (Gothambu Noolputtu)

It is a very healthy and tasty breakfast dish, suitable for diabetic patients. My family loves wheat idiyappams, making it our preferred choice of dinner as well. You will need an idiyappam maker for this recipe.

Ingredients


Wheat flour, 3 cups or 300 g
Water, 2 1/4 to 2 1/2 cups
Grated coconut,            1 1/2 cups (adjust to preference)
Salt, to taste
Note: I use 24 mantra Organic Whole Wheat Flour

Preparation


  • Roast the wheat flour, stirring continuously in a frying pan for 4 to 5 minutes or until the raw smell goes and an aroma rises.
  • Remove from heat and transfer to another bowl and mix in salt. Allow to cool for five minutes.
  • Meanwhile boil water. Mix the flour very well by carefully adding hot water with a spoon or spatula. If the heat is tolerable you can knead it by hand. Otherwise, cover and wait for two minutes. Knead it into a smooth dough and leave covered.
  • Heat water in an idly maker. Grease the idiyappam press to avoid sticking. Sprinkle coconut on each mould. Fill the dough in the idiyappam press and close it. Squeeze the dough onto the idiyappam mould in a circular motion. 
  • Place the mould in the steamer and close the lid to cook for 5-8 minutes. Then remove from heat and transfer into a serving bowl with a spoon. You will get 15 to 18 idiyappams from this dough depending on the size.
