Tender jack fruit stir fry (Idichakka thoran, Kerala style)
Fiber rich delicious Kerala dish!
Ingredients
Tender jack fruit, 1 small
Turmeric powder, 1/2 tsp
Grated coconut, 2 cups
Garlic (chopped), 4 cloves
Green chili (chopped), 2 nos.
Shallots (chopped), 3 nos.
Coconut oil, 3 tbs
Mustard seeds, 1 tsp
Whole red chili, 2 nos.
Onion (chopped), 1 medium
Curry leaves, few
Water, 1 cup
Salt, to taste

Preparation
- Apply oil in your palms and knife. With this oiled knife, shave off the jack fruit’s skin, cut into cubes, and then wash off.
- Cook the jack fruit in a pressure cooker with salt, turmeric and water until two whistles blow. You can also cook in a covered pan with the required quantity of water. Remember to not overcook.
- After releasing the pressure, open the pressure cooker and allow the water to evaporate. Shred the cooked jack fruit pieces by pounding them using a pestle, or pulse in a grinder.
- Coarsely grind the grated coconut, garlic, green chili, shallots and half the curry leaves together.
- Then heat oil in a pan and add mustard seeds. Once it pops, add split red chilies and remaining curry leaves; and saute for a few seconds. Add onion and saute until brown.
- Add shredded jack fruit and coconut mix, saute again for two minutes and leave it closed for five minutes on a low flame.
- Finally open the lid and check salt, and remove from fire.
- Set aside for another five minutes to let the flavors absorb.
