The bitterless bitter gourd roast

Ingredients

Bitter gourd, 1 medium (200g)
Olive oil, 1 tbs
Mustard seeds, 1/2 tsp
Garlic and ginger (finely chopped), 1 tbs
Turmeric powder, 1/4 tsp
Onion (chopped), 1 medium (100g)
Green chili (finely chopped), 1 no.
Curry leaves, few6
Chili powder, 1/2 tsp
Salt, to taste

Preparation

  • Heat oil in a non-stick pan and add mustard seeds. Once its pops add ginger, garlic and turmeric, saute for few seconds.
  • Add onion and saute until lightly browned.
  • Add bitter gourd, chili and curry leaves; and saute for another minute. Cover and cook on a medium low flame for ten minutes. 
  • Add chili powder and salt, saute until bitter gourd is well roasted.
