Easy Mini cake
My mini cake will be your best go-to bake option to indulge in during your tea/coffee sessions. All the required ingredients are common items in your pantry.
Ingredients
1cup=250 ml
Dry ingredients
Wheat flour, 55 g or 6 tbs
Baking powder, 1/2 tsp
Baking soda, a pinch
Salt, a pinch
Wet ingredients
Egg, 1 no.
Milk, 36 g or 3 tbs
Organic light brown sugar*, 50 g or 4 tbs
Olive oil, 34 g or 3 tbs
Vanilla essence, 1/2 tsp

Baking powder, 1/2 tsp

Salt, a pinch
Wet ingredients
Egg, 1 no.
Milk, 36 g or 3 tbs
Organic light brown sugar*, 50 g or 4 tbs
Olive oil, 34 g or 3 tbs
Vanilla essence, 1/2 tsp
*Due to its crystal form, I ground it for a few seconds before adding it.
Preparation
- Sieve the flour by adding baking powder, baking soda, salt, and set aside.
- Grease the cake tin (4 inches) with oil. Lightly dust with a little flour and dust off any excess before setting aside. You can also use parchment paper instead.
- In a wide bowl, beat the egg for 2 minutes at low speed using a hand beater or whisk.
- Add milk and beat again for 30 seconds.
- Add sugar and beat again for 1 minute or until well incorporated.
- Add oil and beat for 10 seconds.
- Add vanilla essence and beat for a few seconds.
- Preheat the oven to 180-degree Celsius.
- Add flour and whisk to combine.
- Scrape down the sides of the bowl as needed with a spatula.
- Transfer the batter to the prepared cake tin and tap thrice.
- Bake in the preheated oven for 35 to 40 minutes at 180 degrees Celsius, or until the cake is baked.
- After 30 minutes insert a toothpick into the centre of the cake. If it comes out clean it is ready (depends on your oven).
- Transfer the cake to a wire rack and allow it to cool completely, then run a knife or spatula around the edge of the tin and turn the cake out.
Your tasty cake is ready. Enjoy with tea/coffee.
