Butternut Pumpkin(Butternut Squash) Dal

Butternut pumpkin dal curry is an easy and delicious vegetarian dish. You can use butternut pumpkin (butternut squash) or pumpkin, but squash is tastier. Butternut pumpkin is rich in fiber and packed with Potassium, Vitamin C, Vitamin A, and Iron. It keeps the immune system strong. On the other hand, Toor dal is enriched with protein, and vitamins making this dish a healthy option. Do give it a try!



Ingredients

1cup=250 ml

Butternut pumpkin (cleaned and chopped), 150 to 175g
Organic Toor dal*, 100 g or ½ cup
Garlic (chopped), 7 g (approx. 5 cloves)
Green chili (split), 2 nos.
Turmeric powder, ¼ tsp
Chili powder, 1 tsp
Cumin powder**, ½ tsp
Salt, ½ tsp
Grated fresh Coconut, ½ cup
Room temperature water, 1 ½ cups + ¼ cup + ½ cup
Hot water, cup

For seasoning
Coconut oil, 2 tablespoons
Mustard seeds, ½ tsp
Onion (finely chopped), 1 small or 100 g
Whole dry red chili (cut into two pieces), 1 no.
Curry leaves, a few

*You can use Organic Tattva or 24 Mantra organic Toor dal.
**If you don’t have cumin powder, use whole cumin and grind it with coconut.

Preparation

  • Wash and soak the dal for fifteen minutes.
  • Cook the dal with garlic in a pressure cooker by adding one and a half cups of water, over a medium flame until three whistles blow.
  • Once the pressure releases, open and carefully mash the dal. Add pumpkin pieces, green chili, turmeric, chili powder, cumin powder, salt, and a cup of hot water. Cook again until one whistle blows.
  • Meanwhile, grind the coconut into a fine paste by adding a quarter cup of water.
  • After the pressure releases, open and add coconut paste along with half a cup of water.
  • Mix well (being careful not to mash the pumpkin) and allow to boil for five minutes.
  • Stir occasionally and check salt.
  • Switch off the flame.
  • Heat oil in a pan and add mustard seeds.
  • Once it pops, add onion, whole chili, curry leaves, and sauté until the onion turns golden brown. Add this seasoning to the curry. The curry will thicken once cooled.
Your pumpkin dal is ready. Enjoy with rice, chapati, or puri.
