Banana Oatmeal Pancakes


If you’re sick of oatmeal porridge, try this wholesome, nutritious protein rich pancake recipe. This recipe also includes banana to fortify the sweetness naturally.

Ingredients

Wet ingredients

Banana (sliced), 1 no.
Milk, ¾ cup
Eggs, 2 nos.
Brown sugar, 1 tbs
Vanilla essence, 1 tsp
Coconut oil, 2 tbs

Dry ingredients
Coarsely ground plain oats, 1 ¼ cups
Flax seed powder, 1 tbs (optional)
Baking powder, 1 ½ tsp
Cinnamon, ½ tsp
Salt, ½ tsp
Coconut oil or butter, for greasing


Preparation:

  • Separate the egg white from the yolks and set aside in a dry container.
  • Mix the dry ingredients in bowl.
  • In a blender add sliced banana, egg yolk, milk and sugar, and blend well. Add oil and blend once again, then transfer to a wide bowl. 
  • Beat egg whites until fluffy and set aside.
  • Slowly add the dry ingredients to the wet ingredients and whisk together until flour disappears. A few lumps are ok. Over-mixing makes the pancakes chewy and gummy instead of light and fluffy.
  • Gently fold in the egg whites with a spatula.
  • Heat a large non-stick pan or cast-iron pan over a medium high flame.
  • Lower the flame to medium low and lightly grease the pan with a tissue or clean cloth.
  • Scoop a ladle full of batter onto the pan and cook until bubbles appear on top and edges starts to cook.
  • Flip the pancake and cook for a minute until golden.
  • Adjust the heat/cooking time, as this depends on your stove. If the flame is too high, your pancakes will be under cooked and burnt. If the flame is too low, your pancake will not rise. When the temperature is perfect, the pancake will fluff up.
  • Transfer to a plate and repeat the process.
Enjoy with maple syrup or honey and fresh fruits.
