Wheat Ada (Wheat Jaggery Pockets)
Ingredients
Makes 3 pockets
Coconut ½ cup
Jaggery ¼ cup
Banana, finely chopped (jackfruit is a tastier alternative) 1 no.
Wheat 100 g
Water, as required
Oil
Salt, to taste
Banana leaf (Optional)
Preparation
Combine coconut, jaggery and banana in a bowl and set aside.
Knead wheat with water and salt to make a very soft dough. Divide the dough into three balls.
If you have banana leaf:
Dip your hands in water (to prevent the dough from sticking to your hand) and flatten one ball onto the leaf. Spread 1/3rd of the filling on one half of the dough and fold the pocket. Pinch the edges to contain the filling.
Spread oil on a frying pan with a cotton ball and lightly warm. Cook the pocket on a low flame, flipping sides from time to time. Remove the banana leaf carefully and continue cooking for a minute to make it crispier.
If you don’t have banana leaf:
