Raw banana stir fry (Pacha Kaya Mezhukkupuratti)

Ingredients



Raw banana 2 nos.
Onion, cubed 1 medium
Carrot 1 no.
Coconut, grated ¼ cup
Olive oil or coconut oil 2 ½ tbsp.
Water 1 cup
Curry leaves A few
Salt, to taste

Preparation



  • Cut the bananas and carrots lengthwise and then widthwise to get four pieces each. Wash thoroughly with some salt. 
  • Heat a saucepan and cook the vegetables with a dash of salt on a medium flame, adding water as required.
  • Meanwhile heat oil in a frying pan to saute the onion and curry leaves. Dump this onto the vegetable pan and continue cooking until the bananas are nicely brown.
  • Optional: Add the grated coconut and heat for a minute.
