Kerala Dosa (UAE Mother's Day Special)

Ingredients:
  • White rice                           1 1/2  cup
  • Urad dal                              3/4 cup
  • Fenugreek seed                   1 Tbl
  • Cooked rice                         2 Tbl
  • Oil 
  • Salt
Preparation:


  1. Wash the rice, urad dal and fenugreek to remove the dirt.
  2. Soak the rice in water for atleast six hours. In another bowl, soak the dal and fenugreek together for six hours.
  3. Grind the urad dal and fenugreek by adding little amounts of water to make a fine paste.
  4. Transfer this paste to a large bowl.
  5. Now grind the soaked rice and the previously cooked rice with water to make a thick paste.(Ensure that the paste is not too runny).
  6. Mix the two pastes in the large bowl*.
  7. Set aside for eight hours or overnight for fermentation.
In the morning add salt and mix gently.Heat a flat dosa tawa and spread oil evenly with a  brush.
Pour a ladle full of the batter and spread it out with back of the ladle to make a thin dosa. When it turns slightly brown at the bottom, flip it. When cooked, remove with a spatula.
Make as many dosas as desired.

Serve and enjoy with chutney or sambar or king fish curry.




Note: 
Use a large bowl as the mixture will rise up significantly during fermentation and the duration of the process depends on the room temperature.
