Vegetable Fried Rice
Serves: 4 people
Ingredients
1 1/2 cup Rice
2 Cardamoms
4 tbsp Vegetable Oil
1 Medium
onion,thinly sliced
4 tbsp Ghee
50 gms Cashew
nuts
1 tbs Raisins
1 Small
onions, chopped
1 tbsp Ginger
garlic paste
2 Green
chillies, chopped
1/2 cup Cabbage,
chopped
1/2 cup Carrot,
finely chopped
1/4 cup Beans,
finely chopped
1/4 cup green peas
1 tbsp Water
1 tsp Garam
masala
1 tbsp Soy
sauce
2 drops Vanilla
essence
Coriander leaves (Optional)
Salt, to taste
Preparation
Soak the rice for half an hour and transfer to boiling
water. Add the cardamom, 1 tsp ghee and enough salt to the water and cook the
rice. Drain the water and set aside.
In a pan, heat vegetable oil and fry the medium onion until
golden brown and set aside.
In a saucepan, heat ghee and fry cashews and raisins and set aside. In the same ghee, add onion and saute for two minutes. Add ginger garlic paste, green chillies and then
vegetables. Cook until the vegetables soften, followed by water and salt. Cover
with a lid and leave on a low flame for another two minutes. Then mix in garam
masala and soy sauce. Finally combine with rice, fried onion raisins and cashews.
Drizzle a little vanilla essence and cover the rice for two minutes on low flame.
(Optional) Throw in a few coriander leaves for an extra
flavour. Serve with raita and pappad!
