Tomato Pilaf
1 1/2 cup Long
Basmati Rice
2 tbs Ghee
2 sticks Cinnamon
2 Cloves
2 Cardamoms
2 Small
onions, sliced
2 1/2 cup Water
3 tbs Olive
oil
1 Big
onion, diced
1 tbs Ginger
garlic paste
1/2 Capsicum
(Red or green)
2 Big
organic tomatoes
1/2 tbs Chilly
powder
1/2 tbs Coriander
1/2 tsp Turmeric
powder
1/2 tsp Garam
masala
1/4 tsp Crushed
pepper
3 tbs Tomato
paste
Preparation
Heat the ghee in a sauce pan and sauté the cinnamon, cloves,
cardamom and onions till they brown. Then add the rice and sauté for another
five minutes on high flame. Pour in the water, sprinkle a little salt, turning
the flame to low, and closing the lid to allow the rice to cook. Once the water
evaporates, set aside this cooked rice.
In another pan, heat olive oil and sauté the onion until
softened. Add the ginger garlic paste, stirring for a minute, followed by
capsicum and tomatoes. Throw in all the spices with tomato paste and mix
well. Finally, combine this with the cooled rice.
(Optional) Coriander and mint leaves add to the flavour.
Enjoy with yoghurt and pappad!
