Lady's Finger Stir Fry (Poriyal, Mezhukkupuratti)
Lady's finger fry is a South Indian lunch staple as it is easy to prepare. It is a tasty side dish to enjoy with rice. I always get nostalgic when preparing this.
Ensure to use tender lady's finger. You need only 25 minutes to prepare this poriyal. This recipe makes three servings.
Ingredients
Lady's finger, 250 g
Coconut Oil, 2 tbs
Mustard seeds, 1 tsp

Organic Red Toor Dal, ½ tbs
Onion (chopped), 1 medium or 125 g
[Optional] Green chili (chopped), 1 no.
Curry leaves, a few
Turmeric powder, ½ tbs
Chili powder, ½ tbs
Pepper powder, ¼ tsp
Grated coconut, 3 tbs
Salt, ½ tbs

Preparation
- Clean the lady's finger properly and pat dry with a kitchen towel to avoid slime.
- Cut and discard the head and ends. Chop into ½ to ¾ cm thick pieces.
- Heat oil in a thick bottomed pan and add mustard seeds. Once it pops, add toor dal and sauté for few seconds over medium flame.
- Add onion, green chili, curry leaves, and sauté for two minutes or until translucent.
- Add turmeric, chili powder, pepper, and sauté for two seconds.
- Add lady's finger and sauté for five minutes continuously, or until it turns tender.
- Add salt, coconut and mix well.
- Close the pan and cook for two minutes.
- Open and sauté for another two minutes. Remove from flame.
- Transfer to a serving bowl.
