Aval (Flattened rice/poha) Vilayichathu

Aval Vilayichathu is a traditional Kerala evening snack. It is mildly sweet and usually enjoyed with sliced bananas. 

                           

Ingredients

cup=250ml
Organic flattened rice/rice flakes/poha, 100g or 1 cup
Grated coconut, 1 cup
Crushed jaggery, 120 g
Water, ¼ cup
Ghee, 1 tbs
Cashews, 10 nos
Roasted Bengal gram (Pottu kadala), 2 tbs
Organic black sesame seeds, 1 tbs
Cardamom powder, ¼ tsp

Note: Here I used Sun Island jaggery. You can adjust the quantity to your preference. 

Preparation

  • Heat the ghee in a pan. Roast cashews and Pottu kadala separately, and set aside.
  • In a thick bottomed pan, boil jaggery in water until it melts completely. Strain the jaggery to remove any impurities and boil again over low flame until it bubbles and thickens. Stir occasionally to avoid burning. You can skip the filtration if you are using organic jaggery or Sun Island jaggery.
  • Add coconut, cardamom to melted jaggery and mix for 3 minutes until well coated. Remove from heat.
  • Add rice flakes and mix well.
  • Mix in roasted cashew, Pottu kadala and sesame seeds. Let it rest for ten minutes.
Your Aval Vilayichathu is ready. Enjoy with sliced bananas. 
Store refrigerated in an airtight container.
