Finger millet Dosa(Ragi dosa)

 Ragi or finger millet dosa is a very healthy breakfast. It is particularly good for weight loss and reduces the risk of diabetes. I had previously posted some recipes where I used ragi flour, but this time I am using the whole ragi. Whole ragi is packed with protein, calcium, vitamins, and fibres.

Ingredients

1 cup =250ml
Organic Whole ragi (finger millet), 1 cup
Urad dal, ½ cup
Rice flakes, ¼ cup (pre-soaked for ten minutes)
Or 
Cooked rice, 3 tbs
Water, 1 cup + 1/4 cup
Salt, 1 tsp


Preparation

  • Wash the urad dal and ragi thoroughly and soak for 6 hours.
  • After 6 hours, drain the water and wash once again. Blend this along with rice flakes into a fine paste in two batches by adding 1/2 cup of water each. If required, add a little more water.
  • Transfer this to a big bowl. Clean out any remaining batter in the blender by swirling ¼ cup of water and add to the batter. Mix well with clean hands and leave covered for 8 to 12 hours (depending on the temperature) in a warm place to ferment. If the temperature is too low, preheat your oven to 100 degree Celsius and allow to cool. When the wire rack feels warm to the touch, place the batter inside.


  • When fermented it increases in volume. It will be frothy and bubbly.




  • Add salt and stir with a ladle. Add a little more salt if you required.
  • Heat a wide non-sick or cast-iron until hot enough. Sprinkle a little water on the pan, if it sizzles, then lower the flame.
  • Stir and take a ladleful of dosa batter and pour on the center of the pan, immediately begin to spread it in a clockwise circular motion until very thin.


  • Increase the flame slightly. Cook for 45 seconds and sprinkle a little organic sesame oil or ghee and cook again 30 seconds or the dosa turns crispy and leaves the side from the pan.
  • Flip and cook again for 30 seconds until crispy.


  • Remove from the pan with a spatula and transfer to a hot plate.
  • Repeat the process.
  • Before cooking each dosa lower the flame and wipe out with a kitchen towel. After flattening the batter increase the heat.
  • You will get 10 dosas.
  • Your tasty, healthy and crispy dosa ready. Enjoy with chutney or sambar.
