Uzhunnu Vada
Ingredients
1 cup=250ml
Urad dal, 1 cup
Onion, 1 small
Green chili, 1 no.
Peppercorns, 1/2 tsp
Curry leaves, a few
Ginger, 1 tsp
Salt,1 tsp
Water,2 tbs +2 tbs
Oil, for frying
Preparation
- Wash the urad dal 3 to 4 times and soak in sufficient water in a bowl, for 4 hours. Wash again and grind the urad dal in two batches by add 2 tbs of water little by little, to a thick smooth paste. Remember to scrape down the sides. Take a little batter and drop in a glass of water. If it immediately rises to the top (instead of sinking) the consistency is perfect. Carefully transfer the batter to a wide bowl.
- Mix the batter in a clockwise motion with your hands to fluff with air. Set aside for thirty minutes.
- Add onion, green chili, peppercorns, curry leaves, ginger, and salt (in that order), and mix well.
- Heat oil in a pan.
- Once it is hot enough, wet your palm with a little water and roll a ball. Make a hole to make a donut, using your fingertips. Slowly drop into the hot oil and carefully and fry both sides until golden in color.
- Transfer to a bowl lined with a kitchen towel. Wet your palms before rolling each donut.
