Moringa leaves&Moong dal curry(Muringayila parippu curry)
Moringa leaves(drumstick leaves) are iron-rich and lower blood sugar and cholesterol. Both moringa leaves and dal pack proteins, vitamins and minerals.
Ingredients
Moringa leaves (washed and drained), 1 cup
Split green moong dal, ½ cup
Water, 2 cups + 1 cup
Garlic, 4 cloves
Green chili (finely chopped), 1 or 2 nos. as per preference
Turmeric powder, ½ tsp
Grated coconut, ½ cup
Cumin seeds or powder, ½ tsp
Oil, 2 tbs
Mustard seeds, ½ tsp
Shallots (finely chopped), 10 nos.
-or- Onion (chopped), 1 no.
Red chili (whole), 3 nos.
Curry leaves, a few
Salt, to taste
Split green moong dal, ½ cup

Mustard seeds, ½ tsp

Red chili (whole), 3 nos.
Curry leaves, a few
Salt, to taste
Preparation:
- Roast the dal for five minutes over a low flame in a frying pan to get rid of the raw taste.
- Then wash well and cook by adding 2 cups water with garlic in a pressure cooker until five whistles blow.
- Once the pressure is relieved, mash with a ladle.
- Add ½ cup of water to loosen, then heat it.
- Add moringa leaves, salt, turmeric, and green chili; cook it for five minutes on a medium flame.
- Meanwhile, grind the coconut and cumin with a little water into a fine paste.
- Add this coconut paste into the dal mix along with the remaining water and mix well.
- Add salt if required. Remove from fire and set aside.
- Heat oil in a saucepan and add mustard seeds. Once it pops, add onion, red chili and curry leaves, sauté until onion turns brown.
- Add this into the dal and gently mix.
