Moringa thoran (മുരിങ്ങാ ഇല തോരൻ)

The moringa is a very popular tree in Southern Kerala. Moringa leaves are very nutritious. It contains vitamins, proteins, minerals, and iron. It lowers blood pressure and strengthens bones. Moringa is an easy growing plant and does not require special care.

Moringa thoran is a side dish and my mom used to cook it three times in a week. It is tasty and healthy!

Ingredients

Moringa leaves (just the leaves, cleaned with water and strained), 3 ½ cups 
Oil, 2 tbs
Mustard seeds, ½ tsp
Shallots (finely chopped), ½ cup
Grated coconut, 1 cup
Garlic (finely chopped), 1 clove
Turmeric powder, 1 tsp
Green chili (chopped), 1 no.
Chilli powder, 1 tsp
Cumin powder, 1 tsp

Preparation:

  • Heat oil in a pan and add mustard seeds. Once it pops, add shallots and sauté until the shallots turn soft.
  • Add moringa and sauté for one minute then close with a lid and cook for 10 minutes on a very low flame. Open the lid and add coconut crushed with garlic, turmeric, green chili, chili powder and cumin powder.
  • Sauté the moringa coconut mix until the thoran loses moisture. Remove from flame.
Your Moringa thoran is ready to be enjoyed with rice. Thank you :)
