Squid Coconut Stir Fry (കണവ തോരന്)
Squid coconut stir fry (Kanava thoran) is a very tasty side dish. It is very popular among Kerala food lovers. I am sure all of you will like this awesome dish very much. Here I am using a clay pot for preparation. The manchatti or clay pot enhances the taste of squid thoran. If you don’t have clay pot use a nonstick pan.
Ingredients
Cut and cleaned squid, 250 g
Coconut oil, 2 tbs
Mustard seeds, 1/2 tsp
Shallots (chopped), 125 g
Curry leaves, a few
Green chili (split lengthwise), 2 nos
Ginger (finely chopped), 1/2 tbs
Garlic (finely chopped), 3/4 tbs
Spices:
Turmeric powder, 1 tsp
Chili powder, 1 tsp
Coriander powder, ¾ tsp
Fenugreek powder, 1/4 tsp
Coconut oil, 2 tbs
Mustard seeds, 1/2 tsp

cumin powder,1/2 tsp

Preparation
- Wash the squid with salted water 3-4 times. Drain the water completely through a strainer.
- Heat oil in a clay pot and add mustard. Once it pops, add curry leaves, chili, ginger, garlic and sauté for one minute on a medium flame.
- Add onion and sauté until it turns soft.
- Add squid, turmeric and salt, then sauté for another minute on a low flame. Keep closed for ten minutes until the water fully evaporates, or the squid cooks well. Stir occasionally to avoid burning.
- Add rest of the spices and coconut, mix well. Check the salt. Remove from fire and keep closed for five minutes.
