Chena Masala (Yam Masala)
Ingredients
Chena (yam) 450g
Water 1 1/2
cup
Salt, to
taste
Turmeric
powder 1/4 tsp
Grated
coconut 1 cup
Garlic 1
clove
Chili powder 1/2 tsp
Cumin powder 1/4 tsp
Yoghurt 1
1/2 tbsp
Oil 1 1/2
tbsp
Mustard
seeds 1/2 tsp
Big red
onion 1
Whole red chilly 1
Curry leaves
Preparation
Cut yam into 2" pieces and cook in boiling water with salt
and turmeric powder on low flame (for about 20 minutes). Stir occasionally to
prevent charring.
Grind coconut, garlic, chili powder and cumin powder into a
smooth paste and combine with yoghurt.
Add to yam and heat for a minute. Pour in some water if it's
too dry.
Heat oil in a pan and drop in mustard seeds. Once it pops,
add onion, curry leaves and red chili. Sauté until the onion turns golden
brown. Add to the yam and masala is ready.
