Egg masala

Ingredients

Servings: 4

Hard boiled eggs                                4
Medium onions                                   4
Tomato, finely chopped                      1
Green chili                                         2
Water                                                1 1/2 cups
Ginger garlic, finely chopped              1 tbsp
Cooking oil                                         3 tbsp
Curry leaves
Salt, to taste
Coriander leaves, to garnish

Spices:

Chili powder                  1 tbsp
Coriander powder          1 1/2 tbsp
Pepper powder              1/2 tsp
Cumin powder               1/2 tsp
Fenugreek powder         1/4 tsp
Turmeric powder           1/2 tsp
Garam masala               1/2 tsp
Mustard seed                 1/2 tsp

Preparation

Heat oil in a saucepan and add mustard. Once it pops add onion and saute until light brown.

Add ginger and garlic and sauté on low flame until onion turns golden brown. Add the tomato, green chili and salt, then sauté for a minute. Add in all the spices and curry leaves, continuing to saute on medium flame until the oil separates. Pour in the water and boil on low flame until the gravy thickens. Drop in the eggs and garnish with finely chopped coriander leaves.


Serve with chappati, appam or bread. Thank you :)
