Carrot cake

Ingredients

200gm self raising flour
200gm caster sugar
2 eggs
100ml milk
2tsp vanilla essence
1tsp cinnamon powder
2tsp baking powder
200ml vegetable oil
150gm carrot

Frosting:
150gm cream cheese
75gm butter
150gm powdered sugar
1tsp vanilla essence
1tsp cinnamon powder



Preparation:

Preheat the oven to 170 degrees.

Mix the dry ingredients in a bowl. Slowly beat in the egg yolks, followed by milk and butter.

In a separate bowl, beat egg whites until it forms soft peaks. Fold in the egg whites to the cake batter. Add the carrots and mix gently. Finally, add the vanilla essence. Bake the batter on the preheated oven for 40-45 minutes on 170 degrees.

For the frosting:
Beat the butter and cream cheese until creamy. Beat in lightly sifted icing sugar, vanilla essence and cinnamon. Chill as desired.

After the cake has cooled to room temperature on a wire rack, decorate with the frosting. Enjoy! :)
