Cauliflower Manchurian

Ingredients for the batter


5 tbs             All purpose flour
4 tbs             Cornflour
1/2 tsp         Crushed black pepper
1/4 tsp         Turmeric powder
Kashmiri 
chili powder 1/2 tsp
1 tsp             soy sauce
water           as required
1/2 tsp          salt
Oil, for deep frying

Preparation

Separate cauliflower into small florets and wash 4 to 5 times, then soak in water by adding turmeric and salt for 10 minutes. After that, soak in hot water for one minute and then drain the water using a strainer. Add cornflour, all-purpose flour, salt, soy sauce, pepper, turmeric powder, chili powder, and salt in a bowl, and mix together. Add water little by little to make a thick batter, ensuring that it doesn't loosen up too much (the consistency should be like that of idly batter).
Add the cauliflower into the batter, and allow it to marinate for 15 to 20 minutes. Once marinated, deep fry the cauliflower in vegetable oil until light golden brown.

Ingredients for the curry

4 tbs               Vegetable oil or olive oil  
1 tbs               Garlic, finely crushed
1/2 tbs           Ginger, finely crushed  
3 nos              Green chilies, chopped   
1(100g)           Onion, finely chopped
3 tbs              Spring onion (stem), finely chopped
1/2                Capsicum              
1/2 tsp           Pepper powder
2 tbs              Soy sauce          
2 tbs              Tomato ketchup
1 tsp              Green chili sauce
1/2 tsp          Sugar                        
1 tsp              Vinegar
1 tsp              Cornflour
3 tbs               water                      
3/4 cup          Hot Water
Salt, to taste
                        

Preparation

Heat oil in a thick bottomed non-stick pan or iron pan. Add ginger, garlic, spring onion, and green chili, and sauté for 4 seconds. Add onion, capsicum and sauté for two minutes or until the onion starts to brown lightly. Lower the flame and add pepper, soy sauce, green chili sauce, tomato ketchup, vinegar, and sauté for a few seconds. Add salt and sugar. Mix well and check the flavor. Add hot water and allow it to boil. Dissolve cornflour in 3 tablespoons of water and stir into the gravy. Continue to boil for one minute over medium flame. Finally, throw in the fried cauliflower and mix well. [Optional] Garnish with chopped spring onion.
