Bittergourd in yogurt (Pavakka Pachadi)
Ingredients
1 Medium bitter gourd, chopped
into small pieces
1/4 tsp Turmeric powder
2 Green chillies, finely chopped
A few Curry leaves
1 Red onion, finely chopped
3 tbs Fresh coconut
3/4 cup Full fat
yoghurt
1/4 tsp Mustard
1 Small ginger, minced
Salt, to taste
Preparation
In a bowl toss the
chopped bitter gourd, salt, turmeric, curry leaves and green chillies. Heat vegetable
oil in a skillet and deep fry the bitter gourd in three portions to minimize
oil wastage. In the same skillet, fry finely chopped onion until
golden brown and set aside.
Grind the fresh coconut with two tbs yogurt into a smooth paste in
a blender. Add the mustard and ginger and blend just enough (till the
mustard breaks).
Heat the coconut paste, onion and bitter gourd mix in a saucepan, stirring
continuously. Add the remaining yogurt and a little salt, if required.
Mix and set aside to avoid overheating (which would loosen consistency).
Enjoy with rice or puri!
