Bitter gourd (pavakka) fry

 


Ingredients

Bitter gourd (pavakka), 500 g
Onion, 200 g
Green chilis (slit), 2 nos.
Whole dry red chili, 2 nos.
Curry leaves, a few
Salt, 1 tsp or to taste
Oil, 3/4 cup

Preparation

  • Soak the bitter gourd in water for 15 minutes, with one tablespoon of salt and vinegar each. 
  • After washing well, pat dry and trim both ends.
  • Slit the bitter gourd lengthwise and cut into thin slices.
  • Slice the onion as thin as bitter gourd, and set aside.
  • Take oil in a pan. Heat well and add half portion of the bitter gourd, green chili, red chili, and curry leaves. Fry by stirring continuously over medium flame until it turns light golden brown and crispy. 
  • Add half a teaspoon of salt while frying.
  • Transfer to a dry bowl and repeat the same.
  • Add onion to the oil and fry until golden brown. 
  • Transfer fried onion to the fried bitter gourd and toss well. 
Your bitter gourd fry is ready. Enjoy with rice.
