whisk the butter and sugar together in a wide dry bowl.
add egg and whisk for two minutes.
add milk and vanilla essence, and whisk again.
Slowly add the dry ingredients to the wet ingredients and mix gently with a spatula until the flour disappears. Be careful not to over mix, a few lumps are OK.
heat a non-stick pan or cast-iron skillet over a medium-high flame.
Sprinkle a little water, if it sizzles the pan is hot enough. Then lower the flame to medium-low
If the heat is very high your pancake will burn, and if the heat is too low your pancake will not rise. So adjust the temperature accordingly.
Scoop a ladle full of batter onto the pan and cook until bubbles appear on the top and edges start to cook.
Flip the pancake and cook for one minute, until golden.
Transfer to a plate and repeat the process.
