Easy Peasy Pancake
Ingredients
Dry ingredients
Wheat flour, 1 cup
Plain flour, ¼ cup
Baking powder, 1 ½ tsp
Baking soda, ½ tsp
Cinnamon, ½ tsp
Salt, ½ tsp
Wet ingredients
Butter, 2 tbs
Sugar, 1 1/2 tbs
Egg, 1 no.
Milk, 1 cup +3 tbs
Vinegar, 1 tsp
Vanilla essence, 1 tsp
Butter, 1 tbs (greasing)
Preparation
- mix vinegar with milk and set aside.
- mix and sieve all dry ingredients in a dry bowl.
- whisk the butter and sugar together in a wide dry bowl.
- add egg and whisk for two minutes.
- add milk and vanilla essence, and whisk again.
- Slowly add the dry ingredients to the wet ingredients and mix gently with a spatula until the flour disappears. Be careful not to over mix, a few lumps are OK.
- heat a non-stick pan or cast-iron skillet over a medium-high flame.
- Sprinkle a little water, if it sizzles the pan is hot enough. Then lower the flame to medium-low
- If the heat is very high your pancake will burn, and if the heat is too low your pancake will not rise. So adjust the temperature accordingly.
- Scoop a ladle full of batter onto the pan and cook until bubbles appear on the top and edges start to cook.
- Flip the pancake and cook for one minute, until golden.
- Transfer to a plate and repeat the process.
