Dragonfruit cake
Ingredients
1 cup=250 ml
Dry ingredients
Plain flour, 1 cupWheat flour, ½ cupBaking powder, 1 full tspBaking soda, ½ tspCinnamon powder, ¼ tspSalt, ¼ tsp
Wet ingredients
Dragon fruit, 150 g Brown sugar, 150 g Egg, 3 nos.Canola oil, ½ cupVanilla essence, 1 tsp
Preparation
- Blend the dragon fruit into a smooth puree.
- Grease the cake tin with butter and dust with flour or line with butter paper
- Sieve the dry ingredients together 2-3 times and set aside.
- Separate the egg yolks from the whites. Bea the yolks until creamy.
- Add sugar and beat again until the sugar completely dissolves.
- Add oil and vanilla essence and beat again to combine well.
- Add fruit puree and mix well.
- Beat the egg whites in a dry bowl until stiff and glossy.
- Add the dry ingredients to the wet ingredients and whisk to combine until streaks disappear.
- Gently fold in the egg whites with a spatula.
- Transfer the batter to the cake tin and bake in a preheated oven at 170 degree Celsius for 30-35 minutes.
- Insert a toothpick in the middle to test if cooked. If it comes out clean, your cake is ready.
- Transfer to a wire rack and allow to cool.
