Dragonfruit cake


Ingredients

1 cup=250 ml

Dry ingredients

Plain flour, 1 cup
Wheat flour, ½ cup
Baking powder, 1 full tsp
Baking soda, ½ tsp
Cinnamon powder, ¼ tsp
Salt, ¼ tsp

Wet ingredients

Dragon fruit, 150 g 
Brown sugar, 150 g 
Egg, 3 nos.
Canola oil, ½ cup
Vanilla essence, 1 tsp

Preparation

  • Blend the dragon fruit into a smooth puree.
  • Grease the cake tin with butter and dust with flour or line with butter paper
  • Sieve the dry ingredients together 2-3 times and set aside.
  • Separate the egg yolks from the whites. Bea the yolks until creamy.
  • Add sugar and beat again until the sugar completely dissolves.
  • Add oil and vanilla essence and beat again to combine well.
  • Add fruit puree and mix well.
  • Beat the egg whites in a dry bowl until stiff and glossy.
  • Add the dry ingredients to the wet ingredients and whisk to combine until streaks disappear.
  • Gently fold in the egg whites with a spatula.
  • Transfer the batter to the cake tin and bake in a preheated oven at 170 degree Celsius for 30-35 minutes.
  • Insert a toothpick in the middle to test if cooked. If it comes out clean, your cake is ready.
  • Transfer to a wire rack and allow to cool.
