Jeera (cumin) Rice

Jeera (cumin) rice is a very tasty easy-to-prepare main dish. On a busy day, you can prepare this for yourself of your children without much effort. However, it is important to choose the best basmati rice available. And never skip on the spices! This recipe serves two to three; if required you can increase the quantity accordingly.

Ingredients

1. Rice, 1 cup
2. Water, 2 cups
3. Ghee, 2 tbs
4. Cloves, 3 pieces
5. Cardamom, 2 pods
6. Cinnamon, 1 inch piece
7. Bay leaf, 1 no.
8. Cumin seeds, 1 tsp
9. Cashews, 8 nos.
10. Salt, to taste
11. Coriander leaves (chopped), 2 tbs

Preparation:

wash the rice five times or until the water runs clear, then soak for twenty minutes. 
Heat ghee in a pressure cooker. Once it melts, add ingredients 4 to 7 and sauté for a few seconds. 
Add cumin and cashew, sauté until the cumin pops or becomes fragrant. 
Drain the water completely from the rice. Add rice to the pressure cooker and sauté for three minutes. Add hot water and let it boil. 
Add salt, cover and cook until one whistle blows. 
Switch off and remove from the stove. Once the pressure releases, open and mix. 
Sprinkle the coriander leaves and keep closed for two minutes. 
Open and serve with raita, pickle or curry😋.Thank you 😍
