Vazhakoombu thoran (Banana flower stir fry) – Side dish


Banana flower is a rich source of Vitamin A and minerals. It is excellent for diabetic and anemic patients.


Ingredients

Banana flower, finely chopped 3 flowers (approximately 2 cups) 
Coconut oil 1 tablespoon
Mustard seeds 1 teaspoon
(Optional) Urad dal ½ tablespoon
Shallots, finely chopped ¾ cup
Green chilly, finely chopped 1 no.
Curry leaves
Coconut, grated 1 cup
Turmeric powder ½ teaspoon
Cumin powder 1 teaspoon
Garlic  2 cloves
(Optional) Kashmiri Chilly powder ½ teaspoon
Salt, to taste

Preparation

  • Remove the outer petals of the banana flower to reveal the white bud. Finely chop the bud and mix in a little oil. Set aside.
  • Heat oil in a pan and add mustard seeds. Once it pops, add Urad dal and sauté until it browns. Then add onion, green chilies and curry leaves, sauté until it softens. Add the chopped flower and salt; sauté for a few seconds. Cover with a lid and cook on low flame for three minutes. Meanwhile crush coconut, turmeric, cumin, chilly powder and garlic. Add the coconut mixture to the banana flower. Stir fry until the water fully evaporates.
