Egg sandwich

Ingredients

Makes 3 servings

6 pieces               Brown bread
1                         Medium onion, thinly sliced
3 cloves               Garlic, chopped
2 tbsp                 Olive oil or vegetable oil
3                         Eggs, beaten
1                         Small tomato, chopped
1 tsp                   Ginger, chopped
1 tbsp                 Chopped carrots
Coriander leaves, a few
Salt, to taste


Preparation


  • Pour the oil into a hot pan and sauté the onions, till just before it browns.
  • Add garlic and ginger; sauté for 30 seconds
  • Add carrot and sauté for another minute
  • Sprinkle salt and dump in the chopped tomato. Cook till the contents soften
  • Pour in the eggs and continue cooking.
  • Add the chopped coriander leaves and kill the flame 
  • Sandwich the mixture between two slices of bread
Tastes great with lettuce and a dollop of sauce!
