Apple Banana Muffins

 Here is my recipe for healthy and tasty muffins! I tried this several times to get them just right - perfectly balanced and moist. All you need is a little patience!

Whole wheat contains vitamins, minerals, and soluble fibre. 

Bananas contain vitamins (including vitamin B6, C), minerals, and potassium. 

Apples are a good source of vitamin C and soluble fibre. It promotes heart health and lowers cholesterol. 

Dates are rich in iron, fibre, and several vitamins and minerals. They also contain antioxidants and nutrients that may lower the risk of heart disease.

Walnuts are sources of Copper, Folic acid, Phosphorus, Vitamin B6, Manganese, and Vitamin E. 






Ingredients

cup=250ml

Dry ingredients

Whole wheat flour, 1 ½ cups

Baking powder, 1 tsp

Baking soda, ½ tsp

Salt, ¼ tsp

Cinnamon powder, ½ tsp

Wet ingredients

Banana, ½ piece or 100 g

Medjool Dates, 6 pieces or 100 g

Organic brown eggs, 2 nos.

Organic sugar, 6 tbs

Vanilla essence, 1 tsp

Apple, 1 medium

Yoghurt (room temperature), 3/4 cup

Olive oil, ½ cup

Chopped walnuts, 3 tbs



Preparation
  • Grease or line the muffin tray and set aside.
  • Soak the dates in lukewarm water for thirty minutes and set aside.
  • Peel, core and finely chop the apple, then divide to two parts.
  • Puree half portion in a grinder without adding water.
  • Transfer the puree to a small saucepan and cook by adding one tablespoon of sugar.
  • Stir continuously until it turns to syrup consistency.
  • Set aside for cooling to room temperature.
  • Mash the banana with a fork and set aside.
  • Chop the walnuts and set aside.
  • Sieve the flour by adding baking powder, baking soda, salt, cinnamon, and set aside.
  • Whisk the egg, sugar, vanilla for two minutes. Transfer to a blender. 
  • Drain the water and finely chop the dates. Blend for two minutes with egg mixture. 
  • Add oil and blend again for another minute.
  • Transfer to a wide bowl and add yoghurt; and whisk well.
  • Add apple sauce and whisk again to mix well.
  • Add mashed banana and whisk for a few seconds.
  • Preheat the oven to 170 degree Celsius.
  • Add dry ingredients to the wet ingredients and mix with a spatula.
  • Fold in apple slices and walnuts.
  • Scoop the batter into the muffin tray and bake at 170 degree celsius for 25 minutes.
  • Allow the muffins to cool on a wire rack.
  • Enjoy with Tea or Coffee
